Cafe Sarkis - a chicagoland original?

for those familair with the near northern suburbs of chicago, cafe sarkis, located in the far northwest corner of evanston, is a local legend. the place is known for its omlette's and a unique sandwich concoction known as "the loretta", which can be made with either ham or bacon. another sandwich which goes by the name of "the disaster" also has its legion of die-hard fans. it was also a place known for its incredibly friendly owner, Sarkis, but he sold the business to a new owner who has committed himself to running the place exactly the same way Sarkis did.

my question: given the ridiculous deliciousness of a loretta (either ham or bacon), why has this style of grilled sandwich not swept across chicagoland, and indeed the planet? i have never had a sandwich anywhere else quite like a loretta, and few that come close to tasting as good. what the hell makes them so friggin good, and why the hell has this sandwich style not blown up into another item in the line-up of venerable, authentic, chicgao-style fast foods?

if you're ever in the northern burbs and looking for a good greasy spoon kinda place with some really unique menu offerings, you gotta check out sarkis, there really ain't anything else out there like it, and that's a shame because it's amazingly delicious. growing-up, i was spoiled because i only lived ~2.5 miles east of sarkis, but now that i'm in the city, sark's is only a "once in a great while" kinda place.>
